Omhash or Hashomel - Corned Beef Hash Omelette

If you love corned beef hash and you love omelettes, you'll love corned beef hash omelette! A variation on a Spanish omelette.

1 onion
couple of cooked potatoes (even tinned are good in this recipe, in fact I believe this is the only use for tinned potatoes)
3 eggs, whisked, salt and pepper to taste
small tin of corned beef
sliced tomato, I prefer beef tomatoes for this.

Fry the chopped onion in a small amount of oil of your choice, when translucent add the diced cooked potato. Continue to saute until just turning golden. Whisk the eggs, adding salt and pepper to taste and add to the onion and potato mix and allow to cook until set, during this stage you can dice or crumble the corned beef onto the omelette. Top with slices of tomato and then remove the pan from the heat to finish under the grill until browned.
